Vegan Oil-Free Habanero Refried Black Beans

Ingredients
  

  • 1/4 medium yellow onion finely diced
  • 28oz can black beans sub ~3 cups cooked from dry w/ 6oz cooking water
  • 3 cloves garlic minced
  • 1-2* regular Habanero pepper finely diced

Method
 

  1. Add habanero, onion & garlic to medium sauce pan
  2. Brown on medium-low heat, approx 5-7 minutes
  3. Add black beans with liquid, stir well and bring to a boil
  4. Reduce to a simmer and cook uncovered for 25 minutes, stirring occasionally
  5. Remove from heat and mash
  6. Finish with salt and pepper to taste
  7. Enjoy!
