Vegan Oil-Free Habanero Refried Black Beans

Ingredients
  

  • 1/4 medium yellow onion finely diced
  • 28oz can black beans sub ~3 cups cooked from dry w/ 6oz cooking water
  • 3 cloves garlic minced
  • 1-2* regular Habanero pepper finely diced

Instructions
 

  • Add habanero, onion & garlic to medium sauce pan
  • Brown on medium-low heat, approx 5-7 minutes
  • Add black beans with liquid, stir well and bring to a boil
  • Reduce to a simmer and cook uncovered for 25 minutes, stirring occasionally
  • Remove from heat and mash
  • Finish with salt and pepper to taste
  • Enjoy!
