Vegan Fudgy Black Bean Brownies

Ingredients
  

  • 1/2 cup oat flour ~10oz rolled oats, blended; can sub regular flour for non-GF
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/8 tsp salt optional
  • 12 ounces black beans 1/4 cup dry; sub one 15oz can
  • up to 3/4 cup sugar (1)
  • 1/3 cup water sub unsweet plant milk for additional richness
  • 1.5 tsp vanilla extract
  • 1/4 cup vegan chocolate chips plus more for topping; optional

Equipment

  • Medium mixing bowl
  • 9x9 or 8x8 inch baking dish

Method
 

  1. Preheat oven to 350F
  2. Combine all dry ingredients
  3. Add wet ingredients to blender and blend until smooth
  4. Add the wet ingredients to the dry and mix well
  5. Fold in chocolate chips
  6. Spread evenly into baking pan; sprinkle with additional chocolate chips
  7. Bake for 20-25 minutes, or until a toothpick or knife comes out of the center clean (2)
  8. Enjoy!

Notes

  1. I've tested the recipe with a 1/4 less sugar and it still comes out great (so 1/2 cup total).
  2. I typically bake for 25 minutes and they come out perfect.
