Preheat your oven to 400 degrees Fahrenheit.
In a medium saucepan, combine all filling ingredients and cook over a medium heat until strawberries start to break down and smell very sweet and the cornstarch has thickened, about 5-7 minutes.
In the meantime, mix together your oatmeal topping ingredients by adding the dry ingredients first, then mixing in the wet and stirring well to combine.
Pour strawberry compote into the bottom of your baking tray, then spoon the oatmeal topping over the top [note#3].
Bake for 30 minutes, then remove from the even and let cool for at least 5-10 minutes before serving by itself or with whipped cream, vegan ice cream or banana nice cream [note#4].
