Quick Spicey Ricey

An easy, throw-together lunch or dinner that's just rice with a couple of flavorful toppings and optional corn and spinach. A great, well-rounded option for when you don't have time or don't feel like cooking!

Ingredients
  

  • 2 cups cooked white or brown rice
  • 2 tbsp soy sauce or to taste
  • 2 tsp sriracha or to taste
  • 1/2 tsp sesame seeds or to taste
Optional Additions
  • 1/2 cup corn fresh, frozen, or canned; or to taste
  • 1/2 cup chopped spinach fresh or frozen; or to taste

Method
 

  1. Combine all ingredients except the spinach (if using) in a microwave safe bowl and microwave until warmed through.
  2. Fold in spinach to wilt slightly before serving.
  3. Enjoy!
Stovetop
  1. Heat the rice and corn in a small to medium saucepan with a small amount of water, then turn off the heat and stir in other ingredients.
