Strawberry Baked Oatmeal Cobbler

This strawberry cobbler is easy to make, tastes delicious, is sweet enough to enjoy for dessert but healthy enough to enjoy for breakfast!

Ingredients
  

Strawberry Filling [note#1]

  • 16 ounces fresh or frozen strawberries
  • 1 tbsp cornstarch
  • 2 tbsp cane sugar optional
  • 1/4 tsp salt optional
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 6 tbsp water

Oatmeal Topping

  • 1 cup rolled oats [note#2]
  • 1/2 cup oat flour [note#2]
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp packed brown sugar
  • 1/4 tsp salt optional
  • 3/4 cup unsweetened plant milk sub water

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a medium saucepan, combine all filling ingredients and cook over a medium heat until strawberries start to break down and smell very sweet and the cornstarch has thickened, about 5-7 minutes.
  • In the meantime, mix together your oatmeal topping ingredients by adding the dry ingredients first, then mixing in the wet and stirring well to combine.
  • Pour strawberry compote into the bottom of your baking tray, then spoon the oatmeal topping over the top [note#3].
  • Bake for 30 minutes, then remove from the even and let cool for at least 5-10 minutes before serving by itself or with whipped cream, vegan ice cream or banana nice cream [note#4].
  • Enjoy!

Notes

  1. You can easily swap the strawberries with another berry, such as blueberries, blackberries, raspberries, etc. or a mix to enjoy some variety.
  2. Feel free to swap the ratio of oats and oat flour to your preference, this is just my preferred ratios.
  3. The oatmeal topping is very wet and you won't be able to spread it, so just "plop" spoonful's over the top of the berry filling as best you can.
  4. Banana nice cream is just frozen bananas blended by themselves with water or plant milk, or with vanilla extract, cocoa powder, other frozen fruit (such as strawberries!), etc.
