Vegan Fudgy Black Bean Brownies

Equipment

  • Medium mixing bowl
  • 9x9 or 8x8 inch baking dish

Ingredients
  

  • 1/2 cup oat flour ~10oz rolled oats, blended; can sub regular flour for non-GF
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/8 tsp salt optional
  • 12 ounces black beans 1/4 cup dry; sub one 15oz can
  • up to 3/4 cup sugar (1)
  • 1/3 cup water sub unsweet plant milk for additional richness
  • 1.5 tsp vanilla extract
  • 1/4 cup vegan chocolate chips plus more for topping; optional

Instructions
 

  • Preheat oven to 350F
  • Combine all dry ingredients
  • Add wet ingredients to blender and blend until smooth
  • Add the wet ingredients to the dry and mix well
  • Fold in chocolate chips
  • Spread evenly into baking pan; sprinkle with additional chocolate chips
  • Bake for 20-25 minutes, or until a toothpick or knife comes out of the center clean (2)
  • Enjoy!

Notes

  1. I've tested the recipe with a 1/4 less sugar and it still comes out great (so 1/2 cup total).
  2. I typically bake for 25 minutes and they come out perfect.
