I have a guilty pleasure for vegan taco bell…
My favorite thing to order there is rice and bean burritos with both types of beans – refried and black. While truly enjoyable on the rare occasions that we would get it rather than cooking, I did wonder how easy it would be to replicate them myself, and rather than making both types of beans, could I just refried black beans at home? This recipe is the answer to that question, and now I just make my own burritos with whole, plant-based ingredients at home rather than buying enough burritos from Taco Bell to feed a large family.
I also love that I was able to make this recipe my own – using the black beans (my favorite) rather than pinto means I get the best of both worlds, and I use a habanero (my favorite pepper) rather than a jalapeno because of it’s tangy and distinct taste. If you’re concerned there will be too much heat with a habanero, using just one in a large volume of beans mellows out the spice but leaves you with a little bit of warmth and some really awesome flavor.
These refried black beans are:
- Rich-tasting without the fat
- Toasty but not ‘spicy’
- Easy to make
- Delicious
If you want a more classic refried bean, you can easily swap the black beans for pinto and the habanero with a jalapeno or spicy red pepper and still end up with a super tasty recipe. Any way you make it, it pairs great in homemade burritos with rice, my Easy Pico De Gallo, spinach, and I throw in some fresh diced bell peppers for a little bit of crunch and a few extra veggies.

Vegan Oil-Free Habanero Refried Black Beans
Ingredients
- 1/4 medium yellow onion finely diced
- 28oz can black beans sub ~3 cups cooked from dry w/ 6oz cooking water
- 3 cloves garlic minced
- 1-2* regular Habanero pepper finely diced
Instructions
- Add habanero, onion & garlic to medium sauce pan
- Brown on medium-low heat, approx 5-7 minutes
- Add black beans with liquid, stir well and bring to a boil
- Reduce to a simmer and cook uncovered for 25 minutes, stirring occasionally
- Remove from heat and mash
- Finish with salt and pepper to taste
- Enjoy!
