This strawberry cobbler is one I am SO proud of. It’s crazy easy to make, requires simple ingredients, tastes AMAZING, hits the spot for a dessert but is healthy enough to eat for breakfast if you want to.
Aaaand I could just stop the blog post there and give you the recipe card! But I’ll share some more details on this one like I always do 😉.
If you hadn’t noticed, I’ve been working on traditional summer recipes all through the month of June (and a little before) making sure I had some awesome options for the upcoming Independence Day holiday here in the the U.S. Since up until now everything I’ve shared is a main or an entrée, I wanted to make sure I included a dessert.
One of the most common recipes I kept seeing in my research was a strawberry shortcake – berries are so wonderful to enjoy during summer that it only makes sense that a berry-centric dessert made sense. So off I went testing out a whole foods, plant based, simple, delicious, inexpensive, healthy, oil free shortcake…
Luck would have it that this is quite a challenge, and I realized I wasn’t going to be able to successfully tackle something in time for the Fourth of July. SO, I shifted gears and landed on a simple but ridiculously good cobbler recipe instead.
You could swap out the strawberries for any berry of your choosing and this recipe would still come out amazing, but I’ve been hooked on strawberries this summer and they just seemed like a great option.
And while this is a cobbler and can easily be enjoyed for dessert with a little bit of whipped cream, vegan ice cream or “nice cream” (blended bananas for anyone who doesn’t know that term), it can also be enjoyed as a baked oatmeal for breakfast.
When it comes to taste, this recipe is:
- Tart from the strawberry and lemon juice
- Sweet from those same strawberries and the optional addition of sugar
- Buttery (without even using it)
- Has great texture
- Flavorful
- Absolutely delicious!
I’m so impressed with how easy it is to make, how indulgent but refreshing this dessert is, and that it tastes to damn good you’ll be hard pressed to pace yourself rather than eating the whole batch at once.
If you try out this recipe, please share it with me by commenting here or on my YouTube channel, or even tagging me in a photo on Instagram @plantsnotplastic. I read every comment and love hearing from you. Enjoy!

Notes
- You can easily swap the strawberries with another berry, such as blueberries, blackberries, raspberries, etc. or a mix to enjoy some variety.
- Feel free to swap the ratio of oats and oat flour to your preference, this is just my preferred ratios.
- The oatmeal topping is very wet and you won't be able to spread it, so just "plop" spoonful's over the top of the berry filling as best you can.
- Banana nice cream is just frozen bananas blended by themselves with water or plant milk, or with vanilla extract, cocoa powder, other frozen fruit (such as strawberries!), etc.
