We’re on day two of my week-long mini series of easy/lazy snacks and meals. Today’s recipe is a simple throw-together rice dish that I’ve eaten countless times when I have rice pre-made in the fridge and feel like putting in ZERO effort to feed myself.
I genuinely enjoy rice all by itself straight out of the pan after cooking it, or sprinkled with a little bit of salt or sauce sauce. This is a slight enhancement on that idea, and rounds it out a bit to make it a full meal with a mix of salt, savory and spice.
I’ll also recommend to anyone (to YOU) to have rice around in your fridge pretty much…always. It’s perfect for exactly the reason I’m sharing this recipe because it lasts in the fridge all week, can be made in advance and heated up with just a few spices and some folded in greens or fresh veggies on the side to make it a whole meal. I also prefer having it around pre-made when I’m made a meal prep dish to pair it with like my Anaheim Chili or Chickpea Potato Curry so that during the week I can pack my meals in advance if I’m on the go or throw both into a bowl and heat it up for dinner without having to put in any effort.
This recipe itself tastes pretty much exactly like what’s in it:
- Starchy (from the rice)
- Salty (from the soy sauce)
- Spicy (from the sriracha)
- Well-Rounded (from the corn, spinach & sesame seeds)
And I’ve just named all the ingredients that go into it! Absolutely mindless yet very flavorful food.

Quick Spicey Ricey
Ingredients
- 2 cups cooked white or brown rice
- 2 tbsp soy sauce or to taste
- 2 tsp sriracha or to taste
- 1/2 tsp sesame seeds or to taste
Optional Additions
- 1/2 cup corn fresh, frozen, or canned; or to taste
- 1/2 cup chopped spinach fresh or frozen; or to taste
Instructions
- Combine all ingredients except the spinach (if using) in a microwave safe bowl and microwave until warmed through.
- Fold in spinach to wilt slightly before serving.
- Enjoy!
Stovetop
- Heat the rice and corn in a small to medium saucepan with a small amount of water, then turn off the heat and stir in other ingredients.
