Easy Fresh Pico De Gallo Salsa

This week I’ve got a simple, no cooking recipe for you – simple, delicious pico de gallo. It takes just a few minutes to chop up, mix together, and serve over rice and beans, with chips, in burritos, etc.

I don’t think there’s much to say on this one other than…salsa is so tasty, cheaper made at home than if you buy something pre-made at the store, and it’s so much better when you’ve made it yourself with fresh ingredients.

My homemade salsa is:

  • Fresh
  • Spicy
  • Acidic
  • Amazing over rice and beans (or any other favorite dish)

It typically whip this up to have with a quick meal of rice and beans, but it also pairs perfectly with my refried habanero black beans (coming next week) in homemade burritos!

Easy Fresh Salsa - Pico De Gallo

Ingredients Method Video Notes

Ingredients
  

  • 4 medium Roma tomatoes diced
  • 1 regular jalapeno pepper finely diced
  • 1 regular serrano pepper finely diced
  • 1/4 small red onion finely diced
  • 1 clove garlic minced, sub 1/8 tsp garlic powder
  • 1/2 tsp crushed red pepper/chili flakes
  • juice whole lime ~2 tbsp, sub lemon juice

Method
 

  1. Combine all ingredients in a bowl and mix well
  2. Serve with rice and beans, in tacos, burritos, or by itself with chips
  3. Enjoy

Notes

Stores in the fridge for 4-5 days, but best eaten in a day or two.
