Crunchy snacks can be hard to come by and day three of the mini-series lazy food week solves that problem with plain old popcorn. The take on it I’m sharing is a stovetop method to pop corn kernels without using any oil, too, which is 100% possible, just as tasty and only requires a little bit more attention to execute.
The trick is to keep the kernels moving in the pan so they don’t burn and then to get them off the heat and out of your pot as soon as they’re done popping.
I personally enjoy popcorn by itself without any toppings, especially if I’m eating it as a snack in this way, but you can sprits your cooked kernels with a small bit of water, vinegar, tamari or soy sauce to get your spice mix to stick or just pull out a spoon and scoop up your spice mix from the bottom of your bowl and eat the popcorn like cereal.
My top recommendation for a topping in nutritional yeast because it gives popcorn a bit of a cheesy flavor – I’ve been enjoying popcorn with nutritional yeast on it since WAY before I was vegan. Usually when I add a topping I’ll mix nutritional yeast, cayenne and salt and go to town.
Describing the flavor of plain popcorn is pretty much…not worth it because we’ve all had it: light, crunchy and satisfying. But again it’s great as a snack food because you can eat a huge volume of it (it’s very low calorie), it’s crunchy and will easily tie you over between meals if you just need a fix. It’ll also keep fairly well for a day or so in an airtight container, so you can make it in advance and bring it with you on the go.

Air-Popped Popcorn
Equipment
- medium saucepan
Ingredients
- 1/4 cup popcorn kernels
Instructions
- Place popcorn kernels in a large pot or saucepan over medium-low heat with the lid on.
- Rotate kernels by shaking the pot every 20-30 seconds as they're heating up to prevent them from burning. Once they begin to pop, rotate them every 10-15 seconds.
- When the popping begins to slow down and get close to stopping (but not completely silent), turn off the heat and transfer to a large bowl immediately to prevent the popcorn from burning.
- Serve by itself with no toppings as a great, crunchy, low calorie snack.
