Pineapple Sorbet / Dole Whip

This pineapple sorbet is smooth, creamy, sweet, tangy & refreshing. A great dessert or midday snack to cool off with!

Equipment

  • high-speed blender
  • spoon or tamper

Ingredients
  

  • 2 cups frozen pineapple chunks
  • 2-3 tbsp pineapple juice optional [note#1]; sub water or unsweetened plant milk
  • 1-2 tsp lemon or lime juice optional; I add one of each
  • maple syrup, agave, sugar or sugar substitute optional; to taste if desired
  • 2 tbsp full fat coconut milk optional [note#2]

Instructions
 

  • Combine all ingredients in a high speed blender, starting with the smallest amount first, and blender on high, pausing to scrape down the sides of the blender or using a tamper to mix while blending.
  • Add more liquid as needed until you get a smooth, even texture.
  • Serve right away.
  • Enjoy!

Notes

  1. You can make this sorbet using just one ingredient (pineapple), it will just take a bit more work in the blender to get it to blend up. I prefer adding some juice, water or plant milk to make it blend easier.
  2. The coconut milk will make this recipe creamier, but I personally don't think it's necessary. Keep it mind that it will also add additional fat and calories to this recipe. I've never added coconut milk to this recipe myself, but check out Maddie/Let's Eat Plants original video for her take on including it.
